In 2010, she joined Mexicue, a Mexican-American barbecue chain founded by her friends Thomas Kelly and David Schillace. Initially operating as a food truck in New York City, Mexicue represented a lean startup model, a crucial learning ground for Collins. Being the first employee at Mexicue offered invaluable insights into capital efficiency. "That experience taught me a tremendous amount about capital efficiency," Collins explained. "We didn’t have venture backing or a small business loan. We just had to be profitable out of the gate and fund our growth through the ongoing profitable operations of our business." This hands-on experience with bootstrapping and lean operations provided a stark contrast to later ventures that would benefit from significant venture capital infusions.

During her tenure at Mexicue, Collins also developed a profound understanding of product-market fit. She observed firsthand how a business thrives when it addresses a genuine market need and struggles when it misses the mark. This period also underscored the paramount importance of human capital in any enterprise. "No matter what business you’re in, no matter what product you think you’re selling, it is always about the people behind that product," Collins emphasized. "Even in a world where AI is disrupting the way that we think about value creation and intelligence, at the end of the day, it is all about the humans who are coming up with the solution." Collins has consistently advised emerging entrepreneurs to guard against this common pitfall. "Because almost certainly, that valuation is either too high or too low," Collins stated. "Therefore, you will be valuing your own success in an unrealistic way on either side. So you cannot value yourself based on the valuation of your company. You have to really separate those two." She further cautions against the allure of simply accepting the largest investment offer. "When term sheets come in with more zeros than you’re accustomed to, it can really boggle your mind," she noted. "And there’s often a temptation to take the term sheet that’s the most money or has the best terms." Instead, Collins advocates for a more nuanced approach, urging founders to thoroughly vet potential investors, examining their track record with other entrepreneurs and seeking references from those who have experienced both successful exits and challenging downturns. This holistic assessment ensures alignment and a supportive partnership for long-term growth.

Planet FWD: Addressing Climate Change Through Sustainable Systems

Following her departure from Zume Pizza in 2018, Collins embarked on her most impactful venture to date: Planet FWD. This sustainability platform was born from a deep-seated desire to address the significant environmental impact of the food system. Collins recognized that while much attention is focused on renewable energy sources like windmills and solar panels, the agricultural and food sectors contribute a substantial portion of global greenhouse gas emissions. "When most people think about addressing climate change, they think about windmills and solar panels and decarbonization," Collins observed. "All of those things are incredibly important. But most people don’t realize that between a quarter and a third of all greenhouse gas emissions come from land use and food systems."

Planet FWD’s mission is to empower brands to measure, reduce, and report their carbon footprint. The company has rapidly expanded its scope beyond the food industry, now assisting brands in the fashion, beauty, and broader retail sectors to achieve their sustainability goals. In 2022, Planet FWD secured $16.8 million in Series A funding, signaling strong investor confidence in its approach and potential.

The Power of Purpose-Driven Leadership

Throughout her career, Collins has grappled with societal expectations of leadership, particularly concerning her identity as a woman in a male-dominated field. She recalls receiving well-intentioned but ultimately misguided leadership coaching that encouraged her to be less "nice" and less "feminine." "And even some subtle coaching around being too feminine," Collins recalled. "But when I tried to be less nice, and I tried to be less feminine, I sounded ridiculous."

Through introspection and experience, Collins discovered that her most authentic and powerful leadership style stemmed from embracing her inherent values of kindness and genuine care for people. This realization led her to champion a leadership approach that empowers individuals. "When you do that, you give people permission to also be who they are, and I think that is how people give their best work, when they feel safe, when they feel valued, and when they feel like they can show up in their own skin," she explained. This philosophy fosters an environment where employees feel secure, respected, and empowered to contribute their best efforts.

Collins firmly believes that leading with purpose yields tangible benefits across all aspects of business operations, from managing teams to securing investment. "If you have employees and investors who share your passion for purpose, you’ll do very well," she stated. "If you don’t, it will become increasingly hard to put the purpose with the profit."
